Apple cake with caramel sauce

For the cake
3 large eggs
2 cups granulated sugar
1 ½ cups vegetable oil
¼ cup Rougemont Mellow apple juice
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 ½ tsp cinnamon
½ tsp ground nutmeg
3 cups apples (Cortland or McIntosh), peeled and diced

For the caramel sauce
– 1 cup butter
– 2 cups brown sugar
– 2/3 cup 35% cream


For the cake
  1. Preheat oven to 350°F and line a cake mold.
  2. In a large bowl, beat eggs, sugar, oil, apple juice and vanilla extract.
  3. Add remaining ingredients and mix well.
  4. Pour mixture into the cake mold and bake for about 70 minutes.
For the caramel sauce
  1. In a medium saucepan, melt the butter. Add brown sugar and cream, stirring continuously over medium heat until brown sugar is well dissolved.
  2. Bring to the boil and boil for 3 minutes, stirring constantly.
  3. Remove from heat and allow to cool.
