Apple and Oat Energy Balls

Ingredients

1 cup of Rougemont apple juice

½ cup dried cranberries

½ cup dried apples, chopped or diced

½ cup of dark chocolate or milk chocolate chips

2 ½ cups quick cooking oat flakes

½ cup pumpkin seeds

½ to ¾ cup of grated coconut

Preparation

  1. In large bowl, combine oatmeal and apple juice
  2. Add all the other ingredients except the coconut and mix well.
  3. Place the coconut on a plate.
  4. Form small balls of about 1 tbsp. soup with the oatmeal mixture and roll in the coconut
  5. Keeps in the fridge for 1 week and tolerates freezing
