One pot of rice with pork and apples

Ingredients

  • A drizzle of olive oil for cooking
  • 1lb minced pork
  • 1 cup of basmati rice
  • 1 white leek, thinly sliced
  • 1 red pepper, chopped
  • 2 cloves of garlic, chopped
  • 1 ½ cups vegetable broth
  • ½ cup of Rougemont apple juice 
  • 1 cup of cream 15%
  • 2 branches of fresh thyme
  • 1 cup of Empire apples, peeled, seeded and diced
  • Salt and pepper from the mill

Garnish

  • 1 cup strong cheddar cheese, grated

Directions

  1. In a saucepan over high heat, heat the oil and then grasp the meat for about 2 minutes.

  2. Stir in remaining ingredients except garnish. Bring to a boil and cover.

  3. Reduce heat and simmer gently for 15 minutes or until rice is cooked.
